She bakes from recipes with the best ingredients that she has tried and tested during her 24 years of confectionary experience. Fruit cakes are coated with a layer of almond paste.

All cake exteriors are iced with sugar paste. All of the decorations featured on the cakes are sugar, they all individually handmade from sugar paste tinted with edible food colours.
